In other news yesterday I made Baguettes for the first time in my life. A welcome home treat for mom.

Baguettes are notorious as deeply difficult for the baker at home. A full time baker and bread maker has the special tools and oven, and experience, to get them right but they're famously temperamental. But I did it yesterday anyway. First the Poolish (a type of starter) needs to be gotten at just the right time risen enough to dome but not have collapsed in itself. then you can't knead it too much. You also have to fold it during its rising time. Its freakishly long rising time. then you need to shape it just enough but not too much. Then the oven has to be juuuuust right. But my Mom who loves a good baguette said it was fantastic and I think it turned out just right soft and chewy on the inside and crunchy hard on the outside.

So I can cook baguettes and pie among other things.
