"Spill it, Short Legs!"

Ethereal Air Bread:
2 tablespoons yeast
1 teaspoon diastatic malt powder [this is crucial](I might have added a tablespoon instead I need to experiment and see)
7 cups of all purpose flour (I prefer the high quality King Arthur Flour)
1 tablespoon salt
2 cups of milk (skim or 2% work great)
1/4 cup vegetable oil
1/4 cup honey
2 large egg whites lightly beaten

Mix together the yeast, malt, 7 cups of flour, and salt in a large bowl. pour milk, oil and honey into the dry ingredients. Add egg whites. Knead the dough adding flour as necessary until soft and smooth ball forms. Place in oiled or buttered bowl and let rise until double in size (1 1/2 hours or so minimum)

Punch dough down and divide in half. Shape each piece into a thick rectangle. Then roll each piece into a log. Place in two greased 8 1/2" x 4 1/2" loaf pans. cover them and let rise for 30 to 45 minuets minimum until loaves have crowned 1" over the top of the pan.
